Roasted Chili Rub Chicken


Ingredients:

(Step 1)

1 tbsp Brown Sugar
1½ tbsp Chilli Powder
1-1½ tbsp Olive Oil
Salt & Pepper
2 tbsp fresh Thyme
Unsalted Butter
2 tbsp Dijon mustard

(Step 2)

3 Rosemary
3-4 cloves of garlic.

Method:



Baste all the ingredients onto the chicken as in Step 1 & insert rosemary into the chicken & also few cloves of garlic to add fragrance in Step 2.
Preheat the oven to 260°C. Rinse the chicken inside and out with cold water, then dry it very well with paper towels, inside and out. The less it steams, the drier the heat, the better.
Salt and pepper the cavity, then truss the bird. Trussing is not difficult, and if you roast chicken often, it's a good technique to feel comfortable with. Well in the beginning I had some trouble to truss the bird but after some time I had a hold of the bird. When you truss a bird, the wings and legs stay close to the body; the ends of the drumsticks cover the top of the breast and keep it from drying out. Trussing helps the chicken to cook evenly, and it also makes for a more beautiful roasted bird.

Now, salt the chicken. I like to rain the salt over the bird so that it has a nice uniform coating that will result in a crisp, salty, flavorful skin (about 1 tablespoon). When it's cooked, you should still be able to make out the salt baked onto the crisp skin. Season to taste with pepper.

Place the chicken in a saute pan or roasting pan and I add butter as in cubes around the chicken. You also can add in onions, potatoes, carrots and celery if you wish. When the oven is up to temperature, put the chicken in the oven. Roast it until an instant crisp colour, use a fork or any sharp object to check whether the chicken is cooked. The whole process is about 40 - 50 minutes. Remove the chicken from the oven and to the plate. Baste the chicken with the juices and let it rest for 15 minutes on a cutting board.

Tip: Pour all the juices from the tray into a sauce pan & heat it in slow heat. Add in few small cubes of unsalted butter and stir evenly. While stirring, add in corn flour and dissolve it with water in a cup and pour it little by little. You don't want your sauce to turn too thick. Add in salt & pepper to taste. 
And Serve.
