Taco Lasagna

Thinkin of doing this recipe soon. I'll upload more pictures from my encounter with lasagna. When lasagna is concern, I'm pretty sure Garfield is there.. Hehehe

Ingredients:

  • 1 lb Ground beef I use extra lean
  • 1/2 cup Green pepper chopped
  • 1/2 cup Onion chopped 
  • 2/3 cup Water
  • 1 pkg Taco seasoning mix
  • 1 can (15 oz) Black beans rinsed and drained 
  • 1 can (14.5 oz) Mexican diced tomatoes undrained
  • 6 wh Flour tortillas (8 INCHES)
  • 1 can (16 oz) Refried beans
  • 3 cups Shredded mexican cheese low fat if desired
Preparation:



In a large skillet, cook the beef, green pepper and onion over medium heat until meat is no longer pink; drain. Add water and taco seasoning; bring to a boil. Reduce heat; simmer, uncovered for 2 minutes.
Stir in the black beans and tomatoes. Simmer, uncovered, for 10 minutes. Place two tortillas in a greased 13-in. x 9-in. x 2-in. baking dish. Spread with half of the refried beans and beef mixture; sprinkle with 1 cup cheese. Repeat layers. Top with remaining tortillas and cheese. Cover and bake at 350 deg. for 25-30 minutes or until heated through and cheese is melted.
Note: I've been searching ups and downs for tortilla flour in the supermarkets here but my efforts turned zero. But well, I managed to get a recipe of making them & it is pretty easy to make. The recipe is as below;

Ingredients:

  • 4 cups of flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cups of water (many substitute warm milk for a fluffier texture)
  • 1/2 cups vegetable shortening (or lard)
Method:
  1.  Mix flour, salt, & baking powder in a large medium/large bowl.
  2. Cut in shortening/lard until lumps are gone.
  3. Make a hole in the center of the dry ingredients.
  4. Add water, about a half a cup at a time, and work mixture into a dough. Knead until smooth. The dough should be slightly sticky but not hard. You can add slightly more water or flour if needed.
  5. Cover and set aside for 10 minutes.
  6. Make the dough into balls about the size of eggs.
  7. Using a rolling pin, roll each dough ball into about a 6 inch circle.
  8. Heat griddle or skillet on medium heat without grease.
  9. Cook tortilla 1/2 to 1 minute (if it starts to bubble, that's long enough).
  10. Flip tortilla to the other side and cook for a few seconds.
  11. Continue until all your dough is cooked.
P/S: if its for lasagna, stop at step 7 and place them onto the greased tray instead.
